We have had so many tomatoes this year.
The fruit flies were going crazy in the kitchen. I needed to do something with the tomatoes. And fast.
I found a bunch of recipes online for oven-roasted tomatoes and thought I'd give it a try.
I used roma tomatoes and chocolate cherry tomatoes from our garden.
I lined two baking sheets with foil and drizzled olive oil all over. I put the tomatoes on the pans and I threw on some sliced garlic, some rosemary and thyme and drizzled more olive oil and some salt and pepper over everything.
I set the oven to 325 and baked them for two hours. They came out looking so yummy. I had to taste them. They WERE yummy.
I only had enough for two quart size bags, but filled them and put them in the freezer.
I can't wait to take them out and use them in a sauce in the middle of winter!

Anything which has the words unbelievably easy in the title has me hooked when it comes to cooking! These toms look yummy!
