Actually, I pronounce it "carmel". As in CARaMEL Corn! Yum.
It is a fall favorite in our house, though I don't remember making it often in the last couple years. I made it yesterday for my daughter to take to a party and none of us wanted to send it away! Today, I thought I'd share the recipe. It's so easy to make.
Caramel Corn
1 cup butter
2 cups packed brown sugar
1/2 cup light or dark corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla
6 quarts popcorn
Melt butter in a medium saucepan, then stir in sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring for 5 minutes. Remove from heat and stir in soda and vanilla. Put popcorn in two large baking pans (I use cheap foil roasting pans so I can throw them away instead of having to clean them). Gradually pour caramel over popcorn, mixing well. Bake for 1 hour stirring every 15 minutes. Spread on waxed paper to cool. Store in an airtight container.
