Date Cake

What perfect timing!  Taylor will be home for Christmas break tomorrow and she loves dates!  Too bad she's not here to help me make it.  I would have made her pit and chop the dates.  ;)

DATE CAKE - A recipe from grandma's collection


I pitted and chopped the dates (about 16) and had them soaking in water while I mixed the other ingredients.


I added the date/water mixture.


Threw in some chopped pecans.


Grandma didn't say what kind of pan to use, so I used a bundt pan.


Looks like maybe it wasn't quite ready to come out of the oven??  My cakes always do that...but it looked so brown on the outside!  I'm not sure the oven temperature is ever right.


It looked pretty when I flipped it over though!  Grandma's recipe didn't call for powdered sugar, but I thought it would look nice.


I didn't have any whipped cream, but I had some Cool Whip, so I just used that.


This is a keeper!  It is good.  WAY better than SPAM!  ;)

  1. Date loaf is one of my favourites, but (hangs head in shame) I always use a packet mix.
    This looks like a nice easy recipe though :-)

    It is delicious and moist! Cutting dates is such a chore, too.
