Beef Porcupines

Because, how could I not include a recipe with a name like this?!

BEEF PORCUPINES - A recipe from grandma's collection


Gather the ingredients in a large bowl and mix.


Form into small meat balls and place in hot oil.


Brown the meat balls, turning frequently.


Add the sauce and water and mix well.


This is what the looked like when they were finished.


They tasted great!  I actually found this recipe all over the internet (many different takes on the sauce) and many people served them with mashed potatoes.  I cooked up a few roasted potatoes, but they are totally not necessary with all that rice.  I would have taken a picture of my plate, but they looked better in the pan!

BEEF PORCUPINES

1 pound ground beef
1/2 cup rice (I did NOT use instant)
1/4 cup onion, chopped
1 t salt
1/4 t pepper
2 T oil
2 (8oz) cans tomato sauce (I used a 13oz box of chopped tomatoes with basil - that's all I had)
1 cup water

Mix beef, rice, onions and seasonings.  Form into small meatballs.  Brown in hot oil, turning frequently.  Add tomato sauce and water.  Mix well.  Cover and simmer for 45 minutes.

Grandma's recipe says it serves four.  I used just over one pound of ground beef and five of us had it for dinner and there were leftovers.

  5. Oh! This reminded me of my Grandmother.

    She made these a lot.

    She always just served them with her homemade bread and vinegary lettuce salad!

  6. I call these porcupine meatballs and we used to love them! I don't eat meat anymore so I'm trying to figure out how to make them vegetarian style. We use tomato soup to cook them.
