{No Flour} Banana Oatmeal Muffins

Did it work Wednesday?  

Yes.  Yes it did.  

I've made these muffins a few times and they always turn out great.  This recipe is all over Pinterest, but below is the recipe I use.  (Just click on the picture.)


I thought they might be good with nuts, so I added what was left of a bag of chopped pecans.  I sprinkled a few more nuts on top along with a couple tablespoons brown sugar and a teaspoon or so of cinnamon.
  

They taste great and I suppose they're even kinda healthy??  As long as you don't eat too many or slather them with too much butter!

Ingredients
*2 /1/2 cup oats (old fashioned kind, not quick cooking)
*1 single serving cup (or 1 cup) of plain low fat greek yogurt *I used French Vanilla (Not Greek) and it worked fine
*2 eggs
*3/4 cup sweetener of choice, I used the real stuff: sugar! or 2 tbs stevia sweetener
*1 1/2 tsp baking powder
*1/2 tsp baking soda
*2 bananas

*chopped pecans
*2 T brown sugar
*1 t cinnamon
1. Preheat oven to 400 degrees. Spray tin with non-stick cooking spray or line 12 muffin tins with silicone or foil liners, or just use a silicone muffin pan. *This recipe doesn't work well with paper liners.
2. Place all* of the ingredients, including bananas in a blender or food processor, and blend until oats are smooth. *I blend the oats first.  I saved about 1/3 and blended those in at the end with the nuts.

3. Add nuts & oatmeal.  Blend, just until mixed.4. Divide batter among cupcake liners.  Sprinkle brown sugar, cinnamon and nuts on top.  Bake for 20-25 minutes, or until toothpick inserted in center comes out clean.
