Easy Peasy Pumpkin Muffins

I don't remember where I first heard about these, but I saw them again not long ago on Pinterest.  So I pinned them.  Pumpkin Muffins.  They are SO easy to make and SO yummy!  The recipe was found here - She found the recipe here.  It only takes two ingredients...I added a third.

Yellow Cake Mix
15 oz can of pumpkin

Mix these two together and scoop batter into 12 muffin cups...Or, do like I did and add about a 1/2 bag of cinnamon chips.  I've always wanted to add these to my pumpkin bread, but I've never been able to find them.  Finally I saw them in the store the other day, so I had to get some. 


Then I tried to get all fancy and use parchment paper to line my muffin tin.  I saw Michael over at Inspired By Charm do this, and I thought it looked so cool!  (I want to try his whole wheat apple muffins with walnut streusel sometime too!)

Put them in the oven at 350 and bake for 15 - 20 minutes.

  2. I like the parchment liner! And I've never seen those chips. I wonder if it would be good with butterscotch or chocolate chips?

  3. I just made cinnamon chip scones (Dad found the recipe on the internet) and they were yummy. I also made Starbuck's recipe for pumpkin scones. They are good too but would be even better with cinnamon chips in them!!

  4. Oh- I forgot to say that your pumpkin muffins look even better than scones and the parchment paper makes them look like you bought them at a fancy bakery!
